Employee moved time/temperature control for safety food to other reach-in cooler at time of inspection.

Ran dish machine and tested chlorine 0ppm. Quaternary ammonia used as sanitizer, ran dish machine again and tested quat 0ppm. Employee set up three-compartments sink for ware washing.
