In walk in cooler observed these items out of temperature, bacon (49cold holding); tempeh (cold holding 47F); tomatos sliced (cold holding 47F);.Walk in door was not latched shut, spoke to operator, door was sealed. Took ambient temp and end of inspection, 38F. Operator states called for service on unit.
No plan review submitted and approved - renovations were made or are in progress. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. In reach-in cooler across from cook line, cut tomato (50F - Cooling, 2nd temp 48F, with 1 hr time lapse) Operator stated tomatoes had been prepped at 10 am, it's 12 pm now. Operator placed tomatoes in walk-in cooler
Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in sanitizer bucket. Operator only had ph test kit available.
Bathroom door left open other than during cleaning or maintenance. Men's and women's bathroom doors propped open. Both doors were closed.
Bowl or other container with no handle used to dispense food. In reach-in cooler across from cook line, container of salsa with plastic soufflé cup used as scoop. Operator removed cup.
Single-service articles not stored inverted or protected from contamination. On shelf across from cook line, multiple stacks of Togo boxes improperly stored. Operator inverted boxes.
