Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed sour cream 47F in reach in cooler at 1:15pm. Re-temped 45F at 1:45pm. Operator stated sour cream had been refrigerated for over 24 hours and voluntarily discarded item.
