Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Meatballs 48F, Sliced Tomatos 52F, Raw Chicken 47F (Less than 1 hour). Ambient temp for Walk In 53F initially. After 15 minutes ambient temp 49F.
Nothing was found. The inspector recorded no violations at all.
Met inspection standards. 2 violations recorded, none serious enough to require a return visit.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish-machine Chlorine ppm shows no reading on inspector test strips. Establishment is using triple sink with quaternary ammonia.
Food-contact surface soiled with food debris, mold-like substance or slime. Cutting boards on prep line soiled/no longer cleanable.
