Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed deli turkey (52F - Cold Holding) stored stacked above the fill line in the top section of the reach in cooler at the salad station. The operator stated the cooked turkey has been held for approximately 2 hours. The operator emptied half of the contents and stored in the lower portion of the reach in cooler. Observed liquid pasteurized egg (70F - Cold Holding) in the kitchen at the breading station. The operator stated the egg wash had been held for approximately 2.5 hours. The operator voluntarily discarded the pasteurized egg. The operator was emailed a time as public health control form.
Vacuum breaker missing at hose bibb or on fitting splitter added to hose bibb. Observed no vacuum breaker at the splitter added to the hose bibb outside across from the walk in freezer.
Handwash sink used for purposes other than handwashing. Observed discarded ice inside of the handwashing sink in the server alley behind the bar.
Accumulation of debris on exterior of warewashing machine. Observed the top exterior of the dishmachine soiled with an accumulation of debris.

Single-service articles improperly stored. Observed boxes of plastic to go containers, plastic portion cups,and deli paper stored on the floor in the outside storage shed.
Uncovered food stored near sink exposed to splash. Observed a metal pan of panko breading crumbs stored underneath a soap dispenser exposed to drips and splash at the hand sink near the expo line. The panko crumbs were discarded by the operator.

Reach-in cooler interior/shelves have accumulation of soil residues. Observed reach in drawer at expo station and on line with food spillage.
