Warewashing sanitizing solution exceeding the maximum concentration allowed. Three compartment sink quaternary sanitizer turns strip past color concentration chart over 600. Operator drained and reset to 400ppm.

Pot pie date marking 7/14 chicken cooked and cooled on 7/13. Discussed with operator to adjust.

Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Drive through soda dispenser has mold like substance build up on the underside behind nozzles and exterior sides of the ice chute. Dust build up forming on cook line hood filters. Debris build up on walk in cooler door gasket.
Wet mop not stored in a manner to allow the mop to dry. Wet mop head stored on floor of mop sink area.
Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Sanitizer solution at 0ppm quaternary, operator remade all sanitizer solution buckets.
A return visit. The problems from the previous inspection had been dealt with.

Per operator repair scheduled for later that day and has limited food service to takeout and drive through only, no dine in service offered until repair completed.
