In-use tongs stored on equipment door handle between uses. Observed tongs on the oven door handle. Operator removed tongs for cleaning and sanitizing.
No handwashing sign provided at a hand sink used by food employees. Observed no employees must wash hands sign at hand-wash sink. E-mailed hand wash sign to operator. Operator printed and hung sign.
Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Observed quaternary sanitizer bucket at 0ppm. Operator corrected quaternary sanitizer to 200ppm.
