In-use knife/knives stored in cracks between pieces of equipment. Observed knives stored in a crack between a reach in cooler and a food prep table. The operator properly stored the knives.

Dented/rusted cans present. See stop sale. Observed 1 dented can of cranberry in dry storage. Observed 6 dented cans of tuna in dry storage. The operator segregated the cans for return.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed the chlorine test kit expired 12/2022.

Employee touched soiled apron/clothes and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed employee fixing shirt with gloves on, then went to proceed to go back to prepping cutting ends off of sub bread. Observed operator coaching said employee, and employee took off gloves, washed hands, dried hands, put on fresh gloves.
Cutting board has cut marks and is no longer cleanable. Observed cutting boards through out kitchen with grooves throughout cutting boards.

Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed microwave on inside top and back vent area with accumulation of cooked on food debris. Observed operator cleaning top of microwave. Vent area won't come clean.
Wet mop not stored in a manner to allow the mop to dry. Observed mop stored with mop head down and not hung up or inverted to dry. Operator hung up properly.
Nothing was found. The inspector recorded no violations at all.
