Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken stored above raw shrimp in walk in cooler. Operater stored items properly.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed metal food racks soiled with food debris and cooking oil on storage shelf in kitchen. Operator put items in triple sink to sanitize properly.

Employee dried hands on clothes/apron/soiled towel after washing. Employee handled soiled raw chicken pans and racks, then wiped her hands dry on her pants and proceeded to put gloves on, without washing her hands. Employee went to wash hands and put gloves on.
