Operator rearranged reach in freezer to properly store non commercially wrapped salmon in reach in freezer and removed raw salmon in walk-in-cooler to properly store.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Sanitizer Bucket (Chlorine +200ppm) on front service line. Operator added more water to dilute sanitizing solution. Retested at 100ppm.

Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package.
