Raw animal food stored over/not properly separated from ready-to-eat food. Observed 6 flats of raw hard shell eggs over 2 cases of gatorade in reach in cooler out back, owner moved the drinks.
No cleaning agent provided in wash compartment of sink. Observed no sanitizer at location, no bleach or quaternary.
No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Observed no proof of any employees reporting responsibility's, owner had all employees sign by end of inspection.

Spray hose at dish sink lower than flood rim of sink. Observed a hose hanging in the 3-compartment sink below the flood rim in the kitchen, employee corrected.
Stop Sale issued due to food originating from an unapproved source. Observed at time of inspection Paige's Preserves is a cottage food that is being sold at the window, 2 mason jars of pickled okra, 1 mason jar of bread butter pickles, 1 mason jar of pickled cauliflower, 2 small mason jars of guava jelly, 3 mason jars of candied jalapeños, 1 mason jar of pickled jalapeños and 1 mason jar of jalapeño garlic dill pickles.
Handwash sink not accessible for employee use at all times. Observed hand wash sink blocked by a chair with a bucket on it, employee moved.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Owner ordered testing strips.

Reach in cooler in previous screen roofed area out back is now exposed due to storm damage, operator has ordered supplies to fix the back area, observed cooler has a lock on it.

Observed operator picked up food from the floor, without washing hands, and then went to prepare food, inspector stopped her, educated on the importance the operator washed her hands.

Air gap between water supply inlet and flood rim of equipment/sink is less than one inch. Hose added to 3 bay faucet eliminating air gap. Vacuum breaker needed.
Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed cook touching buns with bare hands. No gloves. Operator addressed and employee added gloves.
