Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Operator stated they use the quaternary ammonia pick liquid to wash dishes, operator does not have quaternary ammonia test strips.

Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Observed: the sanitizer solution was at over 400 ppm for chlorine. This was diluted to 200 ppm.
No paper towels or mechanical hand drying device provided at handwash sink. Observed: lack of drying devices at the hand wash sink.
Garbage not placed in a receptacle for storage until pick up to make the garbage inaccessible to insects and rodents. Observed: a bag of trash stored outside the back door.
Hood filter missing from automatic fire suppression/exhaust system. Observed: the hood filter system has a wide gap. A new hood filter is on order.
A return visit. The problems from the previous inspection had been dealt with.
