Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cut cabbage (56F - Cold Holding) at cook line, as per operator for one hour.
Floor area(s) covered with standing water. Observed standing water underneath dish machine and in front of dish area.
