What the inspector wrote — 3 findings
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the front counter observed containers of butter balls dairy based butter (64F - Cold Holding). Operator stated butter had been out for one hour and 45 minutes. Discussed with operator time temperature control. Provided operator with Time as a public health control form. Operator began filling out form and placed unused butter back into a cold holding unit.
