Eggs were placed in cooler no more than 1 hour prior but lid to cooler has been open for rush. Manager put ice on eggs and shut lid to cooler.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In bottom of flip top reach in cooler on cook line, bag of shredded cheese (49F - Cold Holding). Bag of cheese had been out for restocking purposes then placed back in reach in cooler.
Building components, attachments or fixtures in poor repair. Multiple hood filters broken/in disrepair. Manager stated new hood filters are ordered and on the way already.
Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Two ice buckets on top of ice machine not inverted. Manager flipped ice buckets over.

Manager stated tray of eggs were in top of flip top cooler before being placed in bottom of reach in cooler. Manager put all eggs back into walk-in cooler to bring down temperature.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In hot holding unit near drive through area, sausage (125F - Hot Holding). Manager stated sausage was just cook few minutes prior but voluntarily discarded.
Handwash sink used for purposes other than handwashing. On handwash sink next to 3 companies sink, dirty whisk stored in sink. Manager removed whisk from sink and placed in dish.

Raw animal food stored over/not properly separated from ready-to-eat food. At cook line, in reach-in cooler, flat of raw shell eggs stored over cooked onions and cheese. Operator moved to proper storage.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In undercounter reach-in cooler at fry station, hot dog, corn dog, chicken wings (53-57F - Cold Holding). Operator stated items in cooler 1.5 hours, moved to walk-in cooler and walk-in freezer. Chicken retemp 30f.
Employee washed hands in a sink other than an approved handwash sink. Operator asked employee to wash hands, he started washing hands in triple sink. Manager stopped employee and had him use handwash sink.

At drive thru and front counter areas, top plate in ice bins have black mold-like substance. Operator cleaned and sanitized.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Establishment uses squat sanitizer, no test strips available.
