Items stored in kitchen reach-in cooler: cheddar cheese (47F - Cold Holding); American cheese (48F - Cold Holding). Manager stated items placed in cooler one hour prior to temperature being taken. Manager moved cheeses to reach-in freezer to reduce temperature to 41F.

Employee cracked eggs and proceeded to handle clean utensils on cook line without washing hands or changing gloves. Manager had employee wash hands, change gloves and change utensils.
Employee washed hands with no soap. Employee rinsed hands in three compartment sink without using soap. Manager had employee rewash hands with soap.
