Employee has not received adequate training related to their assigned duties as evidenced by the inability to answer basic food safety questions. Observed establishment using chlorine bleach for sanitization operator provide provided the quaternary test kit. Inspector tested the bucket with chlorine sanitizer with test strips and demonstrated to the operator the difference in the two test kits.
Food-contact surface soiled with food debris, mold-like substance or slime. Stand up reach in freezer inside the kitchen soiled on the bottom. Observed operator cleaning during the inspection.
