Employee rubbed hands together for 5 seconds (less than 10-15 seconds) while washing hands and then dried hands on cloth towel after cashiering and before preparing food/drinks for customers. Advised Operator of proper hand washing requirements, employee then washed/dried hands properly.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. At steam table; cooked tapioca boba honey flavor (108F - Hot Holding). Operator stated item reheated prior to being held for less than 1 hour, moved to be reheated to 165F and held at 135F or above.
No probe thermometer provided to measure temperature of food products. Advised Operator to acquire.

Wall not smooth, nonabsorbent and easily cleanable in food preparation, food storage, warewashing areas or bathroom. Under counter storage cabinet sheet rock joints and large gaps between wood and sheet rocks.
