Per employee not prepared or portioned today and out of bottom cooler approximately 1 hour. Employee returned ham to lower cooler to rechill. 3) On speed rack beside fryers, bowl of french fries (38-56F - Cold Holding). Per manager bowl filled less than 30 minutes for use. Employee returned fries to lowboy cooler to rechill.
