Employee touched soiled apron/clothes and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Employee at cookline wiped gloved hands on apron and continued to handle clean utensils at the cookline without washing hands or changing gloves. Manager had the employee wash hands during this inspection.
Raw animal foods not properly separated from one another based upon minimum required cooking temperature when stored in a freezer - not all products commercially packaged. 1. Pan containing raw chicken stored in shelf above raw beef inside walk-in freezer. 2. Boxes containing raw chicken stored on shelf above wrapped portions of raw beef inside walk-in freezer. Manager rearranged the freezer during this inspection.
Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. Pans containing dumplings and cooked shrimp stored on shelf at room temperature below cookline without time marks. Manager verified the shrimp is being held using time as a public health control and stated the shrimp and dumplings were placed on the cookline at 12pm and added the proper time marks during this inspection.
Toxic substance/chemical improperly stored. 1. Spray bottle containing degreaser stored directly on top of box containing bags of flour near walk-in freezer. 2. Spray bottle containing degreaser stored on lower shelf of prep table at front counter, beside plastic wrap and clean wiping cloths. Manager removed both chemicals during this inspection.
Handwash sink removed from food preparation/dishwashing area. Must be reinstalled in the same location where removed. Handwash sink at front counter removed from left side of cookline. Handwash sink is identified on the approved plans.
No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Two employees working in kitchen and handling food without proof of food handler training or proof they have been informed of their health reporting responsibilities. Inspector provided manager a new copy of the employee health reporting agreement during this inspection.
Spray bottle containing toxic substance not labeled. Spray bottle containing degreaser missing label in back of kitchen. Manager added the proper label during this inspection.
Bowl or other container with no handle used to dispense food. Single-use cup without handle stored down inside bag of flour in back of kitchen. Manager removed the cup from the flour during this inspection.
Employee eating in a food preparation or other restricted area. Employee eating ice cream at cookline. Manager had the employee leave the area during this inspection.
Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Employee's personal backpack, hats, and jacket stored above and beside restaurant food on dry storage shelves. Manager removed the personal items from the area during this inspection.
Establishment using wood (other than a hard, close-grained wood) as a food-contact surface. Bamboo utensil in-use at cookline.
Food storage container/container lid cracked or broken. One plastic pan with missing corner on dish shelf above warewash area.
Food stored on floor. Containers of cooking oil stored directly on floor in dry storage area.
In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Handle of scoop stored down inside sugar in bin near walk-in freezer. Manager removed the scoop from the sugar during this inspection.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Hood filters above cookline soiled with grease.
Shelves attached to walls not constructed of materials that are corrosion resistant, non-absorbent, smooth and easily cleanable. Plastic coating torn on dish storage shelves in warewash area.
Working containers of food removed from original container not identified by common name. Bin of sugar missing label in back of kitchen. Manager added the proper label during this inspection.
