Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishwasher (Chlorine 0ppm). Operator informed the inspector that a technician will be on site between 2 and 3pm. There is no triple sink on premises to perform manual dish washing.
Raw animal food stored over/not properly separated from ready-to-eat food. In the double door reach in cooler in the back of the kitchen raw calamari is stored over cooked pasta, pooled raw eggs are stored on top of tomato sauce. Operator moved items to proper storage order.
