Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Several items in reach in cooler not dated. Operator was able to determine prep dates and dated accordingly. Operator states he has been using small post it notes and the fall off. I suggested possibly tape.
