Temperature taken at 11:34. Inspector recommended holding butter on time controls. Operator added to current written time procedures and employee marked appropriate butter discard time.

Empanadas in front display case and cooked potatoes in kitchen being held on time as a public health control are not marked with time. Employees marked discard time on all products.

In chest freezer at front of kitchen, raw sausage not in original package stored over French fries. Also, in silver reach-in cooler next to stove top, raw shell eggs stored over salad dressing.

Also, in silver reach-in cooler under coffee syrup station, cream cheese (48F - Cold Holding); individual butters (49F - Cold Holding) Per operator, they had been in and out of the cooler many times during breakfast rush for several hours. At front counter in glass display not controlled by temperature, cheese danish (72F - Cold Holding) Operator moved milk, creamer, and cream cheese to freezer to bring temperatures down. Operator put butter and all pastries on time control. At front counter in glass display cooler, tiramisu (45F - Cold Holding) Per operator, they had been in and out of cooler multiple times during breakfast rush. Operator lowered temperature of cooler.
