Observed the following food temperatures greater than 41°F; tomato paste (74F - Cold Holding); salsa's (73F - Cold Holding) As per chef food had only been out for about 30 mins. Chef stated that they are stored on counter to be placed on customer's tables by waiter. All were located on counter in carver station. Chef moved to cooler.
