Observed chlorine sanitizer solution at dishwasher machine was at 0 ppm. Operator replaced to chlorine sanitizer solution. Final reading of chlorine sanitizer solution at dishwasher machine 50 ppm.
No paper towels or mechanical hand drying device provided at handwash sink. Observed to paper towel at hand wash sink attached to prep station. Operator provided.

Observed establishment doing ROP of raw beef, raw pork, sausages, raw chicken, cooked ground beef, cooked chicken, and cooked potatoes. Coached chef and manager on correct procedure.
