Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed smoked salmon pre portioned in solo cups at 46F in 3 door reach-in cooler on cook line. Operator stated she had been in and out of cooler multiple times in the last hour. Operator placed salmon in 2 door up right reach-in cooler to rapidly bring down temperature.
Handwash sink used for purposes other than handwashing. Observed fruit fly light in handwashing sink in kitchen next to freezer. Operator moved like to chemical closet.
In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Observed handle of spoon in powdered sugar on lower shelf on cook line under food prep table. Operator moved handle above powdered sugar.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed melted butter at 93F for approximately 1 hour. Advised operator melted butter must be held at 135F or above. Provided operator with information on Time as a public health control.
Toxic substance/chemical improperly stored. Observed stainless steel cleaner stored on dry storage shelf next to Nutella.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed quaternary sanitizer bucket at 400ppm. Advised operator to dilute bucket. Sanitizer bucket after dilution at 200ppm.
