Observed the operator move the vegetables to another reach in cooler.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Small cafeteria: ham croquettes (109-114F - Hot Holding). As per operator, cooked 1 hour before the inspection. Operator discarded and prepared new ham croquettes.
Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. Discussed with the operator and provided the handout.

Time/temperature control for safety food reheated for hot holding not reaching 165 degrees Fahrenheit for 15 seconds within 2 hours. Observed shredded pork (67 F - Reheating); shredded chicken (82 F - Reheating) at steam table at prep area. As per employee, items were taken out of cooler and directly into steam table for reheating. Observed temperature of steam table at 160 F. Employee took items back for proper reheating at shredded beef (172 F - Reheating); shredded chicken (199 F - Reheating).
Handwash sink used for purposes other than handwashing. Observed soiled spoon stored inside of hand wash sink near 3 compartment sink. Observed employee washing containers inside of hand wash sink in cafeteria area.
