Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Walk in cooler- 1.cut tomatoes 1:50pm 50F (ambient cooling since 12pm) to 48F at 3:30pm. Observed cooling in deep container. operator moved to freezer. 2. raw chicken wings 48F at 1:55pm ambient cooling since 11:30 to 47F at 3:30pm. Observed chicken cooling in deep container. At this rate proper cooling to 41 F will not occur. Operator moved to freezer to rapid chill.

Dish machine reading 0 ppm chlorine after multiple attempts. Employee began to clean triple sink to set up sanitizer.
Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. In walk in cooler, containers of raw whole fish on floor under containers of raw chicken. Employees began to rearrange items for proper separation.

Per employee cooked just before 11:00am. Both items moved to walk in to chill instead of holding out on counter.
