Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed employee bring dirty dishes to dishwashing area, to then go and initiate in a food task without washing hands first. Coached manager on correct procedures.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Chicken being held at (47F - Cold Holding); Beef at (47F - Cold Holding) and Cut tomatoes at (48F - Cold Holding) in reach in cooler at the cook line.
Employee has not received adequate training related to their assigned duties as evidenced by the inability to answer basic food safety questions. Observed dishwasher unable to answer basic sanitizer concentration levels. Coached employee on proper levels as per food code.
