Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed Dishwasher (Chlorine 0ppm); Manager was able to fix, Dishwasher 2nd test (Chlorine 100ppm).
Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed male employee did not wash his hands after touched a cutting board and knife where raw chicken was cut; he removed his gloves, replaced with new gloves, and proceeded inside walk in cooler. Manager explained to the male employee the correct procedure.
Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw shrimp over sliced ready to eat onions and ready to eat sauces inside RIC the near office.
Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed raw beef lomo prepped on 03/17/26 into smaller portions bags (57F - Cooling). A stop sale was issued.

Also Observed in house salsa (67F - Cooling); in house riccoto (67F - Cooling) at the self service salsa station for consumer. Per operator placed just after noon time. Manager had employees place items on ice.
