Operator discarded the yellow rice. Observed Shredded Lettuce (79F - Cold Holding); Sliced Tomatoes (54F - Cold Holding) on ice. According to manager they were placed 45 minutes ago. Operator put more ice for rapid chill. Observed Mixto ceviche (47F - Cold Holding),oyster cocktail(47F - Cold Holding). According to operator placed it on fish display at 9 am. Operator removed food items and placed them inside the walk in cooler for proper cooling.
