Operator stated the lettuce has been in cooler approximately 20 minutes and that it will be gone quickly. Manager put it on time and added time marking.

Operator moved cut lettuce and chicken tenders to bottom of reach in cooler to bring temperature down.

On cook line in white bucket in front of grill, cut tomatoes held on time as a public health control not time marked. Operator stated they were put at 30 minutes prior and put time marking on container.
