Stop Sale issued due to food not being in a wholesome, sound condition. Reduced oxygen packaged Sheep's Head Fish 30F.
Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Reduced oxygen packaged Sheep's Head Fish 30F. Chef stated they receive fresh fish, place fish in bag and vacuumed seal bag, then place in freezer. They remove fish from freezer and thaw in bag in walk in cooler with out a HACCP. See stop sale.
Bowl or other container with no handle used to dispense food. Pitcher with no handle stored in bin of rice. Employee discarded pitcher.
Time/temperature control for safety food thawed in an improper manner. Thawing- beef 39F in standing water. Employee placed beef in walk in cooler.

Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Chlorine 0 ppm. Manager hanged out chlorine and re primed equipment and corrected chlorine solution to 50 ppm.

No conspicuously located ambient air temperature thermometer in holding unit.
Soda dispenser not cleaned at least once every 24 hours at bar. Both nozzle soda dispensers soiled with build up.

Ice buildup in reach-in freezer and/or walk-in freezer. Ice buildup up on side and bottom of walk in freezer door.

Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Tortilla bins not in use heavily soiled on exterior. Manager sent bins to ware washing area.
Handwash sink used for purposes other than handwashing. Ice stored in hand wash sink in kitchen prep area. Manager removed ice from sink.
Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Ceiling tiles and vents in multiple areas thru out kitchen and in ware wash area and dry storage have soil/ rust. Manager has a maintenance order in to repair ceiling tiles and vents.
Cloth used as a food-contact surface. Multiple cloths use under sauce bottles, pans of food and under eggs. Manager removed all cloths from food contact surfaces through out kitchen.
Cutting board has cut marks and is no longer cleanable. Manager has new cutting boards on order.
Frozen time/temperature control for safety food being slacked at room temperature is no longer frozen solid. Thawing- at 3 compartment sink- beef 45F (2:00-3:36). Manager had employee place beef in walk in cooler.
