Time/temperature control for safety food packaged using a reduced oxygen method without a HACCP plan not properly labeled with the production time and date. Observed beef filets vacuum packaged and not labeled in walk in cooler. Per operator, items are Sous vide, grilled and served within 48 hours of packaging.
