Stored food not covered. Upright freezer- coconut shrimp, breaded cod, veggie burgers ( not covered). Employees placed lids over cod and shrimp and wrapped veggie burgers.
Thawed portions of ready-to-eat, time/temperature control for safety food rose above 41 degrees Fahrenheit while being thawed under running water. Shrimp 63F held in walk in cooler after thawing (11:00-12:30).
Time/temperature control for safety food packaged using a reduced oxygen method without a HACCP plan not removed from its package within 48 hours after packaging. ROP tuna and ROP salmon thawed in package and held cold in drawers on make line and in walk in cooler. Employee removed fish from packages and labeled pans at time of inspection.
