Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. meatloaf (132F - Cooling) 3:00pm heat cooling since 2:30pm recheck 30mins 125F. Operator moved meatloaf from double reach in cooler to freezer to facilitate the cooling process.
