Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. gyro meat, Slice Swiss cheese (44F-45F - Cold Holding)in front deli case. Operator stated it was opened a lot during lunch. Operator stated he will keep it closed to have food chill.
