Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the front facing counter flip top reach in cooler, cut tomatoes (46F - Cold Holding) just pulled from the walk in cooler stored in plastic container inside larger container blocking air flow and overstocked over cooling plane. Discussed storage options for items in reach in cooler to allow proper cold holding. Operator and employee began adjusting storage.
