Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Operator handled bread for a sandwich with their bare hands. Educated the operator on proper handling of ready to eat foods. Operator discarded the slices of bread, washed their hands and put on gloves.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the make table cooler on the cook line, ham (45F - Cold Holding); turkey (44F - Cold Holding). Per operator items were sliced this morning and in cooler less than 4 hours.
Handwash sink not accessible for employee use at all times. There are items in the hand washing sink by the triple sink. Operator cleared the hand washing sink.
