What the inspector wrote — 1 finding
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the reach in cooler across from cook top observed cut tomatoes (47F - Cold Holding); chicken salad (48F - Cold Holding). Operator stated foods are moved to reach in cooler at 11am. Operator and I discussed keeping the lid closed when possible to maintain time-temperature control for safety foods at or below 41F. Operator reduced the amount of product and closed lid.
