Observed evidence of raw sewage from holding tank on food trailer being stored in 5 gallon buckets and grease that was dumped by employees of establishment on the ground near location of the food trailer where is currently being used as construction site. Operator currently has up-to-date commissary on file which was validated.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Créme (86F - Cold Holding); cheese (80F - Cold Holding), both stored next to service window and place there from reach in cooler approximately 15 mins ago. Employee place back in reach in cooler
