Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed the dishwasher machine testing at 0ppm. Discussed setting up the three compartment sink until the dishwasher machine is sanitizing correctly. Tested three compartment sink at 100ppm.
Equipment and utensils not properly air-dried - wet nesting. Observed on the drying rack.
