Observed on preparing table at front counter - sliced cheese (52F - Cold Holding); block of ham (53F - Cold Holding) as per operator items held out of temperature for approximately 1 hour. Operator placed items in reach in cooler.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed at flip top cooler at back room - Diced tomatoes (51F - Cooling at 11:50am, cooling since 9:00am - 48F at 12:20m); cooked peppers and onions (51F - Cooling at 11:50am, cooling since 9:00am - 45F at 12:21am) operator placed items in a working cooler.
Proof of required state approved employee training not available for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. As per operator 2 employees on duty without training certificate.
