Operator moved TCS foods to different coolers to quick chill.

Observed breakfast potatoes and hash browns put on time, no time marking. Per operator, foods put on time at 9:00am. Operator put time marking on foods.

Per operator, food stored out of temperature for approximately 40 minutes. Cook put food inside oven to reheat to 165F for hot holding.
