Observed under heat lamp: fries (88F - Hot Holding); cooked sausage (76F - Hot Holding); cooked bacon (86F - Hot Holding); Maduros (143F - Hot Holding). As per operator food has been there less than 4 hours. Operator moved to flat top for hot holding, inspector provided TPHC form. Observed onions under grill at 80F ( Hot Holding); as per chef, onions were there for less than one hour. Chef moved to flat top to raise temperature.
