Do not use equipment/utensils not properly sanitized. 3 compartment sink at 0 ppm quat, dishwasher did not know to check the strength of the Sanitizer when setting up the station, no test strips found to test quat with from operstor. End gallon bottle of quat replaced, testing at 200 ppm now.
Employee failed to wash hands before putting on gloves to initiate a task working with food. Wiping cloth soiled used for multiple surfaces and on hands, them observed server touch hands with soiled wiping cloth than apply gloves to handle ready to eat food, corrected and re-educated.

Employee has not received adequate training related to their assigned duties as evidenced by lack of general knowledge in performing their assigned duties. Dishwasher did not know how to test quat in 3 compartment sink or were to find test strips for sanitizer. Did not know to look that product is in line. Educated while inspection was taking place to inform new employee of the testing of the sanitizer.
Establishment conducts non-continuous cooking of raw animal foods without written procedures approved by the division. Cook on site at the time when temps were taking in cooks line stated chicken wings are cooked in oven to 140-155° and then cooled in walk in cooler, panned and placed on line to cook in fryers when ordered. Per kitchen manager on his arrival, he stated raw chicken wings are cooked to 1650 in oven, pan and reheated in fryer as order. Procedures need to be clear of all cooks.
