Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee bare handed washed bunches of Thai basil and placed in container for use. Reviewed proper usage of gloves with ready to eat goods and employee reached with gloves on.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. 1) On top of ice machine in cooker/warmer, boba pearls (89F - Hot Holding). Unit not turned on. Per employee prepared at 11:00am. Employee voluntarily discarded. 2) On large burner unit at cook line, beef broth (118F - Hot Holding). Per manager, initially prepared at approximately 11:30-12:00pm. Manager turned burner back on to reheat and proper hot hold.
