Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Checked dishmachine not working properly final rinse gauge reading wash cycle 141,final rinse 189 Spoke to Executive Chef notify engineering department to find out the status on the dishmachine. Manager from engineering given status dish machine is working once checked is not working properly. Procedure to follow is transported dishes to the main kitchen dish machine until repaired or part is ordered.
