In warming cabinet hotdogs (126F - Hot Holding); cooked pork sausage (127F - Hot Holding) for 15 minutes per operator. Operator returned to cook too for reheating and turned up temperature on warmer
Toxic substance/chemical improperly stored. Stainless steel cleaner over clean dish side of triple sink. Chemical ice packs over drink mix next to water heater. Operator placed in proper storage.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Sanitizer Spray Bottle (Quaternary 500+ppm) by triple sink. Operator discarded.
