In the walk-in cooler sauce (47*F - Cold Holding); eggplant (47*F - Cold Holding); Poultry (46*F - Cold Holding); Beef (46F - Cold Holding) all food was relocated to other cold holding units that are at 41 or below or freezing As per Jesus the MOD he checked food temperatures in the walk-in cooler last night and they were 41-42 F. Food in walk-in cooler was out of temperature less than 4 hours and is being rapid chilled in other units
